Opened December 2019; suffered a fire three weeks after opening in early 2020 requiring full rebuild. Reopened after reconstruction. Red, Rosso, and Tinto were sold to Randalls in January 2026 but Rouge appears to remain under Dave Matheson's ownership.

Rouge is a wine, cheese, and charcuterie bar and shop on Le Pollet, St Peter Port, operating in the vinoteca style — customers can taste from a selection of 120+ wines, enjoy artisan European cheeses and charcuterie boards, and buy bottles to take away. Opened in December 2019 by Dave Matheson, it offers 25+ wines by the glass, a reservable tasting table for up to eight, and private hire. —
